2 Ingredient Gluten Free Sweet Potato Bites

This recipe really could not get any easier. All you need is 2 simple ingredients to make these awesome and simple snacks. They are naturally gluten-free and can be easily stored for later on. I like adding a little cinnamon on top and having these with some ketchup for my snack. There are also Paleo and dairy free as well so really it's free of all allergies besides egg. I'm sure there is many different sized trays you can use to make these bites but I used an 2x2 inch tray to make them and they turned out great. Hope you enjoy this recipe!   • 1 cup of mashed sweet potatoes
  • 8 egg whites
  • Cinnamon (optional)
  1. Preheat oven to 375.
  2. To mash sweet potatoes, place it in the oven or microwave until a fork can be inserted. Let cool, take off the skin, mash gently.
  3. Combine all ingredients in a blender until combined well.
  4. Poor into greased muffin pan and put in the oven for 20-25 mins
  5. Take out, let cool, then serve!

  4. Suggestions for an egg substitute? If you're just mixing them in you're not using them for body or volume, correct? Would something like flax seed or a starch substitute work?

  5. The egg whites I think are what allow it to rise and form into the bites but you could try it! I'm not entirely sure it will work out though.

  8. It may! I'm not sure how it will work with the eggs but it may be worth trying! It might not work to well since it is not a starch like the sweet potato but I am not sure.

  9. Can you make these with whole eggs?

  10. You might be able to but you may have to reduce the amount you use since the yoke would make up more compared to the egg whites. I'm not entirely sure though since I have only used the egg whites in the recipe.
